Gazpacho Asian style

A nice refreshing recipe (thanks to my friend Virginie) to be prepared with a food processor in no time. Served ice-cold, it is delicious, healthy, and it does not need any cooking. Try it, you’ll love it!

Serve chilled, no cooking necessary.


  • 2 avocados
  • 2 cucumbers
  • 2 shallots
  • 1 bunch of fresh coriander and mint
  • 2 Granny Smith apples
  • 2 limes (zest and juice)
  • 10 g peeled and grated fresh ginger root
  • 150 ml water (more or less)
  • 5 TBS olive oil
  • Salt and freshly ground pepper
  • Step 1 Mix all the ingredients together and store in the refrigerator for at least an hour. If you find it too thick, just add a bit of water to your taste.

Good to know!

I have served this refreshing soup with black sesame seeds, or with pumpkin or sunflower seeds, and even with chili flakes… and each time it tasted wonderful. You may also try the Seed Crackers, the Pumpkin and Hazelnut Cod Gratin, or the Roasted Asparagus with Almond and Capers.
