A nice refreshing recipe (thanks to my friend Virginie) to be prepared with a food processor in no time. Served ice-cold, it is delicious, healthy, and it does not need any cooking. Try it, you’ll love it!
Gazpacho asian style

Serve chilled, no cooking necessary.
Ingredients
- 2 avocados
- 2 cucumbers
- 2 shallots
- 1 bunch of fresh coriander and mint
- 2 Granny Smith apples
- 2 limes (zest and juice)
- 10 g peeled and grated fresh ginger root
- 150 ml water (more or less)
- 5 TBS olive oil
- Salt and freshly ground pepper
Directions
- Step 1 Mix all the ingredients together and store in the refrigerator for at least an hour. If you find it too thick, just add a bit of water to your taste.
Fast and flavorful, this recipe require no more than 20 minutes preparation !
