REFRESHING ZUCCHINI, FETA CHEESE AND MINT SALAD

No need to use the stove for this delicious and simple recipe: the zucchinis stay raw!
- 2 to 3 zucchinis
- 200 g feta cheese
- Juice of 1 lemon
- 2 TBS olive oil
- Sea salt and freshly ground pepper
- 2 stems of fresh mint
- 2 stems of fresh parsley
- Step 1 Rinse the zucchinis, peel them entirely lengthwise to get long strips, a bit like ribbons.
- Step 2 Place the zucchini strips in a salad bowl with the lemon juice, the olive oil, the salt and pepper. Rinse, pat dry, and finely chop the mint and parsley leaves, and add them to the preparation. Sprinkle feta cheese on top, and store in the refrigerator for at least 20 minutes. Serve chilled.

We made the salad in a tupperware for a picnic on the beach and it was very refreshing.
