The only difficulty here lies in choosing the right pineapple: it should be heavier and more aromatic than the other pineapples of the same size. Take a closer look and make sure that the leaves are fresh and green and its sides bulging.

  • 1 ripe pineapple
  • 1 lime
Directions
  • Step 1 Cut the pineapple in 4, remove the skin and the rough core. Thinly slice the quarters with a slicer or with your bread knife. Save as much juice as possible and spread evenly on your serving dish. Grate the lime zest over it and add the lime juice. Cover with plastic wrap and store in the refrigerator at least 2 hours before serving.

Good to know!

Marcela likes to use the lime zest and juice progressively layer by layer. And if the pineapple does not seem sweet enough, she adds a bit of sugar on each layer before spreading the zest and juice.

  • This is perfect for a summer meal! So refreshing and the lime zest adds so much to the pineapple . I think I will not be able to eat pineapple in any other way!
