Use a chilled ready-made puff pastry and prepare quickly as a firm dough will be easier to handle. I find it easier to roll the puff pastry from the centre of the dough. Let the puffs cool down 5 minutes before eating to avoid burning.

Ingredients
  • A quality ready-made puff pastry
  • Goat cheese the soft type such as Mme Loïk or Chavroux
  • Honey
  • Thyme
  • Sea salt
  • 1 egg yolk
Directions
  • Step 1 Pre-heat the oven to 180°. Unfold the dough keeping the wax paper on and quickly spread the goat cheese all over it. Top up with the honey, add sea salt and sprinkle with thyme. Cut the dough in 4 and then in logs about 1,5 cm wide, roll the logs and spread them over the wax paper sheet. Baste with egg yolk for a golden touch. Bake for about 20 minutes, allow 5 minutes to cool down to avoid burning. Serve warm.
