Combava steamed cod fish

Steamed cod is a sure value as it is always delicious. For this recipe, I used a steam oven, but you also may cook in a bamboo steamer or wrapped in wax paper in your oven.

Ingredients
  • 2 cod thick fillets
  • 1 small combava lime
  • Salt and ground pepper
  • A few chilli bits or Espelette Chilli
Directions
  • Step 1 Sprinkle salt and pepper on each side of the cod. Add the grated zest of half the combava and all the spices.
  • Step 2 Place in the steam oven set on 80° for 20 minutes and serve immediately. Steamed potatoes are a good combination as a side dish.

Good to know!

The combawa’s pulp is never used in recipes as it tastes very bitter. Only the green peel is used as well as the tree leaves. You may keep the combawa in the freezer for months, its unique flavor will not alter.

Vegetable tajine and my watercress dressing are a good combination as a side dish too.
