Good to know
For 4 to 8 people. Emilie’s nuoc mam sauce can be stored in the refrigerator for a long time. My advice is for you to prepare it in advance. The Spring rolls can be made up to 6 hours ahead, 2 per person is enough I think. Remove them from the fridge about 15mn before eating. Beef bo bun gives a festive atmosphere to your meal and is quite nutritious as well. You probably won’t need too much of vanilla mango mousse. Put it in small glasses.

Tips and tricks
The dessert is very easy to prepare last minute, you can use frozen mango. The main course requires quite a number of little steps. So, if you are well organized or if you have a bit of help, it can be made quickly… if not, it requires patience.

If it’s to much work for you to prepare Spring rolls, don’t hesitate to change. Serve the gazpacho Asian style instead, a nice refreshing recipe ready in no time with a food processor. If you prefer something hot and cooked in advance, you can try the Thai spiced squash soup.
If you are more than 4 don’t forget the dishes take a lot of place…You’ll need a big table. Propose chopsticks for the main course !
