The type of peaches I like to use here are called vine peaches. They are flat rather than round, are sweet and tasty, and their flesh is delicate and white. They are not as available as the other type as they are quickly perishable. You will find them on local producers’ markets, in orchards or in vineyards. Vine peaches are best in season in the month of September.

A tiny bit of fresh mint and lemon juice wake up all the others flavors and add a refreshing note I love.
Ingredients
- 1 ripe mango
- 20 vine peaches
- 3 white nectarines
- 3 oranges (to make one cup of juice)
- A few mint leaves
- 1 lemon (optional)
Directions
- Step 1 Choose your fruits just ripe and serve no later than 2 hours after peeling, cutting and putting together the fresh peaches, mango and nectarines. If you need to make your fruit salad over 2 hours ahead of time, squeeze the lemon over the fruits and add the juice of the 3 oranges, stir regularly and store in the refrigerator. That way, your fruit salad will taste a little sourer but it will remain colorful.
To tell if a peach is ripe, look at the color. It’ll have no hint of green around the stem.
