FIG CHUTNEY

A unique and delicious, sweet-and-savory condiment that pairs perfectly with foie gras from my friend Caroline.

It pairs perfectly with foie gras, keeps like a jam, and stays fresh for several weeks after opening when refrigerated. It is also enjoyed with cold meats. Best prepared with fresh figs.

Ingredients
  • 400 g of figs
  • A handful of golden raisins
  • 150 g of red onions
  • 150 g of cane sugar
  • 1 tsp of cinnamon
  • 1 tsp of ginger
  • 3 tbsp of balsamic vinegar
  • 75 g of water
  • Salt and freshly ground pepper
Directions
  • Step 1 Peel the onions, cut them in half, and slice them finely. Add the washed figs cut into quarters, then the water, sugar, cinnamon, and ginger. Cook for 20 minutes, stirring occasionally. Lightly salt and pepper. Incorporate the vinegar and let it cook again for another 20 minutes.
  • Step 2 Transfer the chutney into small, sterilized jars using a funnel. Seal them tightly and turn them upside down until completely cooled. The jars can be stored for a very long time (at least 3 years) in a dry, dark place. Once opened, they can be kept in the refrigerator for several weeks.
