Add the washed figs cut into quarters, then the water, sugar, cinnamon, and ginger. Cook for 20 minutes, stirring occasionally. Lightly salt and pepper. Seal them tightly and turn them upside down until completely cooled. The jars can be stored for a very long time (at least 3 years) in a dry, dark place.
