Mix well and roast for 20 minutes until cooked, shaking the tray half way through. <\/span>\n                <\/li>\n                                <li itemprop=\"recipeInstructions\" itemscope=\"\" itemtype=\"http:\/\/schema.org\/HowToStep\">\n                    <span class=\"step\">Step 3<\/span>\n                    <span itemprop=\"text\">In the meantime, heat 2 tablespoons of olive oil in a large pan. Add the sliced onions and peppers. Cook over medium heat for about 10 minutes stirring frequently.<\/span>\n                <\/li>\n                                <li itemprop=\"recipeInstructions\" itemscope=\"\" itemtype=\"http:\/\/schema.org\/HowToStep\">\n                    <span class=\"step\">Step 4<\/span>\n                    <span itemprop=\"text\">Add the chopped tomatoes, crushed garlic, spices and herbs, reduce the heat and simmer for 10 minutes lid on.<\/span>\n                <\/li>\n                                <li itemprop=\"recipeInstructions\" itemscope=\"\" itemtype=\"http:\/\/schema.org\/HowToStep\">\n                    <span class=\"step\">Step 5<\/span>\n                    <span itemprop=\"text\">Add the roasted aubergines, mix well and simmer for another 20 minutes lid on. Remove the lid and cook for further 10 minutes while baking the aubergine cubes with a spatula. Taste and adjust seasoning.
